What We're Eating (And More!) The daily diary of an Expatriated American living in Peru -with thoughts, meanderings, cooking tips and recipes
I spend much of my professional life trying to convince people that the space between U&T is not that great. I spend much of my personal life realizing that sometimes, it is. These are the reflections of an American professor living in Norway.
Chuck and I visited Ecuador three years ago. We fell in love with the city of Cuenca. After spending six months in Cuenca as tourists, we decided that this was where we wanted to spend our retirement years.
We bought a condo, returned to the United States and began to get rid of all our worldly possessions.
Nine months later we were back in Cuenca applying for residency and setting up housekeeping.
We obtained our residency within six weeks and are so very happy living here in Ecuador.
Our blog is all about our moving experience. It covers our coming to Ecuador as tourists, buying our condo, getting rid of all our "stuff" and relocating in Ecuador. It is about the friends we left behind and the new friends we have made here. It is about our travels here in Ecuador and our day to day experiences.
Our blog is in it's third year and it is our way of sharing our lives with our family and friends back in the USA. Our blog has gained readers as we continue to post about our everyday lives.
